If you’re in the DC area, what better way is there to spend the gorgeous summer weather than brunch at Dino Restaurant before a afternoon visit to the National Zoo in Cleveland Park? But if you want to spend time with Dad at home, why not surprise him with a homemade breakfast? Try this easy-to-make recipe for huevos rancheros (fried eggs with peppers and tomatoes).

Ingredients:

  • Oil, 45 ml
  • Garlic, 1 clove chopped
  • Red pepper, 1 deseeded and chopped
  • Onion, 1 finely chopped
  • Eggs, 4
  • Chili pepper, 2 deseeded and finely chopped
  • Tomato, 400 g canned
  • Marjoram, leaves to garnish
  1. Heat the oil in a large pan and gently cook onions until soft but not brown.
  2. Add garlic and chili peppers, cook for 2 minutes then add the chopped bell peppers.
  3. Cook for 5 minutes then add the tomatoes, bring to a boil and simmer for 15 minutes. Season to taste with salt and pepper.
  4. Fry eggs in a non-stick frying pan and serve on top of the pepper and tomato mixture. Garnish with marjoram leaves.
